Sea Bass with Squid Ratatouille

Mediterranean sea bass has the right flavour and texture for the seasonings but feel free to substitute for your fish of choice. Each vegetable is cut into a ¼-inch (5-mm) dice, as is the squid, making for a superb look. White wine definitely adds amazing aroma and distinctive quality to this dish, but it would also work without it, just substitute it for water if you are avoiding alcohol.
