Poached Salmon with Cauliflower Purée

White wine is the usual choice when it comes to poaching salmon. This recipe takes different approach and the results are delicious – tender, moist fish with a ‘red onion’ sauce that enhances but does not overwhelm. And as for cauliflower puree, surprisingly, when cauliflower is cooked and pureed in the food processor with a little grated Parmesan cheese it looks and tastes similar to mashed potatoes – but with a fraction of the carbohydrates.
