Paleo Banana Pancakes

The hardest thing going primal for me was giving up my morning comfort food, which for years was peanut butter and jelly sandwich. Getting up early in the morning is so much better when you have something to look forward to! Banana pancakes is such a delicious no-brainer that it won my sleepy morning heart almost immediately. It has become my favorite breakfast option for busy weekday mornings. Bye bye peanut jelly, hello banana goodness.


  • The rule of thumb with this recipe is that for each 1 banana you need 2 eggs (this formula results in 1 good size serving). To make 3 servings, simply add another banana and 2 eggs.


  • My favorite nut butter to use for this recipe is almond butter, but any paleo friendly nut butter would do.


  • No oil is required for this recipe provided that you are using a good, non-stick skillet. If that’s not the case, feel free to add a little bit of coconut oil to oil the pan as its heating up.
