I love grilled fish, can’t get enough of it. Grilling is indeed the most primal way of cooking and the flavors of grilled meat or fish are always deeper and more enticing for me compared to dishes prepared on stove or in the oven. Halibut grills very nicely, and the mustard based marinade flavours the fish and also helps to lock the moisture in. The herb and caper vinaigrette evokes the Mediterranean—the flavour of the warm weather and sea breeze.
