This is a variation on my favorite childhood recipe that my mom used to make us for breakfast. The original recipe is made with white flour and sugar. Paleo version is made with almond flour and can be sweetened with either raw honey, maple syrup or coconut sugar. Breakfast cheesecakes make a delicious alternative to pancakes. And fresh cottage cheese from grass fed cows is the least problematic type of dairy that is rich in protein, calcium and phosphorus.
