I’m a big breakfast person, and, as such, I’m always on the quest for new healthy breakfast recipes. I almost never skip breakfast, and do believe it is the most important meal of the day. So I always keep an eye on quick, delicious and nutritious breakfast recipes that would get me going in the morning. Baked Eggs with Mushroom Sauce is a staple of French cuisine, and can often be spotted on the menu of the best restaurants in Paris. Sometimes it’s presented as an appetizer, but in my books, – its a breakfast;)
This recipe will require ramekins. Be sure to measure the size of your ramekins. You will need a 1-cup (250-ml) capacity to hold both the egg and the sauce. I made this for the two of us, but the ingredients below are listed for 4 servings. My ramekins were pretty big, so I’m not sure how I would fit 4 in a baking dish (would have to be a pretty big dish !), or I guess you could use two dishes if you are cooking for four. Its quick and easy, the actual cooking takes only about 10 min, very little hustle and total satisfaction at the end!
I actually used duck eggs (pictured above) because I had some left over from my Classic French Omelette recipe I cooked the weekend before. But feel fee to use any type of eggs, it really doesn’t matter. And when it comes to preparing the sauce, timing is critical. If you prefer, you can make the sauce ahead and bring back to a boil just before pouring over the hot eggs because everything needs to be hot for the yolk to finish cooking.
When you start eating it, the egg breaks and mixes with the rich sauce. Yum! Luxurious, high in protein, breakfast done within minutes and using only a small handful of ingredients.
I love how simple and elegant this breakfast dish is, and I thought it was fun and different to be eating my breakfast out of a ramekin. In fact, when I was making this recipe, I got an idea for another one that would employ ramekins as well.
