HERB SALAD DRESSING

The delicate flavours of this salad dressing combine to perfectly compliment a summer green salad. Works best in salads containing lettuce and tomatoes. 

Servings 4 servings

Ingredients

  • 1 tsp lemon juice
  • 2 tsp orange juice
  • Pinch of sea salt
  • 2 extra virgin olive oil
  • 1 walnut oil
  • 2 finely chopped chives
  • 1 finely chopped chervil
  • tsp finely chopped thyme

Instructions

  1. In a small mixing bowl, combine lemon juice, orange juice and salt. Slowly whisk in olive and walnut oils until combined. Stir in chives, chervil and thyme.

  2. Gently toss into salad. Enjoy!

CHILI LIME SALAD DRESSING

This dressing is ideal for salads containing berries or slightly sweet, crunchy vegetables. 

Servings 4 servings

Ingredients

  • 2 tbsp lime juice
  • 2 tbsp finely minced jalapeño pepper
  • 1 1/2 tsp coconut sugar (may be substituted with a 1 tsp of belted raw honey)
  • 1/2 tsp sea salt
  • 1/4 tsp freshly ground black pepper
  • 1/3 cup extra virgin olive oil
  • 2 tbsp finely chopped coriander

Instructions

  1. In a medium bowl, whisk lime juice with jalapeno, sugar, salt and pepper. Whisk in oil. Stir in coriander.
  2. Gently toss your salad with as much dressing as needed to lightly coat.

HONEY LEMON DRIZZLE

Zing of lemon and the sweetness of honey combine beautifully with any fresh-picked, flavourful sturdy greens such as spinach, arugula, radicchio, romaine, baby beet greens and escarole or  any of your favourite salad greens.

Ingredients

  • ½ tsp finely grated lemon zest
  • 2 tbsp freshly squeezed lemon juice
  • 2 tbsp white wine vinegar
  • 1 tbsp liquid raw honey
  • 1 tsp grainy mustard
  • ¼ tsp sea salt
  • Pinch freshly ground pepper
  • cup grape-seed or mild olive oil

Instructions

  1. To make dressing, whisk together lemon zest, lemon juice, vinegar, honey, mustard, salt and pepper. Gradually whisk in oil until blended.
  2. Drizzle over greens and toss to coat.

LEMON VINAIGRETTE

Lemon vinaigrette adds a touch of fresh crisp flavor to any salad. 

Servings 8 servings

Ingredients

  • 2 tbsp lemon juice
  • 1/4 cup extra virgin olive oil
  • Salt and freshly ground pepper
  • 1/4 cup chopped chives
  • 1/2 cup shaved Parmesan

Instructions

  1. Whisk lemon juice and oil together, season with salt and pepper. Sprinkle with chives and Parmesan shavings.

  2. Enjoy!

TARRAGON SALAD DRESSING

Servings 4 servings

Ingredients

  • 2 tbsp fresh lemon juice
  • 2 tbsp fresh orange juice
  • 2 tsp chopped fresh tarragon , or 1⁄2 tsp dried
  • 1 ⁄3 cup olive oil
  • Salt and freshly ground pepper

Instructions

  1. Whisk together lemon and orange juice and tarragon. Whisk in olive oil. Season with salt and pepper.
  2. Drizzle over a salad and enjoy!

GRAPEFRUIT VINAIGRETTE

This dressing is very fresh with citrus flavours predominating. Mixes well with arugula and spicy ingredients.  

Servings 6 servings

Ingredients

  • 1 small grapefruit , sectioned for easy squeezing
  • 1 to 2 tbsp apple cider vinegar
  • 1 tbsp olive oil
  • 1 small garlic clove , minced
  • ¼ tsp Dijon mustard
  • Sea salt and freshly ground pepper to taste

Instructions

  1. Holding grapefruit in hand over a bowl, squeeze juice measuring about 1/4 cup. from membrane into bowl to use for dressing.
  2. Stir with 1 tbsp vinegar, olive oil, garlic and Dijon; taste and add remaining vinegar if needed.
  3. Drain remaining juice from grapefruit; drink or save to put in a smoothie at another time.
  4. Drizzle over a salad and enjoy!

MUSTARD VINAIGRETTE

The mustard vinaigrette has a strong kick to it, so you don’t need a lot. Goes very well with salads accompanying meat dishes and grilled foods.

Ingredients

  • 2 tbsp red wine vinegar
  • 1 tsp chopped jalapeño pepper (or to taste)
  • 1 tsp chopped garlic
  • 1 tsp dried mustard powder
  • 1/3 cup olive oil
  • sea salt and freshly ground pepper

Instructions

  1. Whisk together red wine vinegar, jalapeño, garlic and mustard powder. Whisk in olive oil. Season well with salt and pepper.
  2. Toss salad with vinaigrette just before serving.

SWEET MUSTARD SALAD DRESSING

This is my go to dressing for green summer salads that could benefit from a dash of sweetness. For savory version, omit the honey. 

Servings 4 servings

Ingredients

  • 1/4 cup virgin olive oil
  • 1 tbsp balsamic vinegar
  • 1 tbsp red wine vinegar
  • 1 tbsp Dijon mustard
  • 1 tsp melted raw honey
  • Sea salt and freshly ground pepper to taste

Instructions

  1. Whisk all ingredients together in a cup or a bowl. Drizzle over a salad to lightly coat. Enjoy!

APRICOT & CIDER MUSTARD

Hit with fruit two ways, this mustard is sweet summery goodness. It needs to rest for a week in the fridge before using, so plan ahead. As it matures, the mustard loses bitterness and gains depths of fruit flavour that works with backyard barbecued goodness and more refined fare too.

Servings 1 cups

Ingredients

  • 1/2 cup chopped dried apricots
  • ½ cup hard cider , stirred until flat (use organic variety with no added sugar)
  • ½ cup apple cider vinegar
  • 2 tbsp yellow mustard seeds
  • 1 tbsp brown mustard seeds
  • ¼ cup Keene’s mustard powder
  • ¼ tsp sea salt

Instructions

  1. Combine all ingredients in a 2-cup (500‑ml) glass jar, cover loosely and rest for 24 hours on the countertop. Turn out into a food processor and pulse until apricot has broken down and mustard is mostly smooth but mustard seeds remain whole. Cover and refrigerate for a week before using. Mustard will keep, refrigerated, for a month.

APPLE-BALSAMIC DRESSING

This dressing keeps in the refrigerator for a month. Use it as a drizzle over servings of grilled fish, poultry or meat.

Ingredients

  • 1 cup apple juice pure, organic (not processed, added sugar variety)
  • 1 cup balsamic vinegar

Instructions

  1. Place juice and vinegar in a pot and bring to a boil.
  2. Lower heat and cook for 15 minutes or until slightly thickened—it will thicken considerably as it cools. You can whisk in a little warm water if becomes too thick.
  3. Drizzle over servings of grilled fish, poultry or meat.

APRICOT SALSA

This salsa is refreshing and pretty. Serve with grain free chips, veggies, fish, pork or chicken for a medley of great flavour and texture.

Servings 2 cups

Ingredients

  • cups fresh apricot , pitted and chopped
  • 2 tbsp red onion , finely diced
  • ½ cup plum tomato , finely diced
  • 1 tbsp fresh cilantro , coarsely chopped
  • ¼ tsp sea salt
  • 1 tsp melted raw honey
  • 1 tbsp white wine vinegar
  • 1 tbsp olive oil

Instructions

  1. In a medium bowl, stir together all the ingredients and serve alongside chips, veggies, fish, pork or chicken.

FLORENTINE MAYONNAISE

Traditional commercial variety of mayonnaise is not a good healthy fat, low carb condiment as it often contains unhealthy, over processed blends of vegetable oils, high sodium content and added sugar. Luckily, with a little bit of shopping around, you can find healthy mayonnaise alternatives that only use the basic ingredients: eggs, olive oil, lemon juice and salt. Or better yet, you can make your own at home. Add to it some high quality Parmesan (one of the lowest-fat low-carb cheeses), basil and spinach and you'll get your mayo to a whole new level - Florentine style!

Ingredients

  • 1 cup baby spinach
  • 1/2 cup fresh basil
  • 1/2 tsp chopped garlic
  • 2 tbsp extra virgin olive oil
  • 1/4 cup Parmesan cheese
  • 1/2 cup organic mayonnaise (homemade, non-commercial works best)
  • Sea salt and freshly ground pepper

Instructions

  1. Combine spinach, basil, garlic and olive oil in food processor. Puree until smooth. Stir in Parmesan and mayonnaise. Season with salt and pepper.
